This is Shizukutori Junmai Daiginjo from Kamikawa Taisetsu Sake Brewery.

This is a limited edition product from the directly managed store in Kamikawa Town.

It is not available at general liquor stores or restaurants.

This is Shizukutori Junmai Daiginjo.

Shizukutori is a process in which the mash is placed in a sake bag and hung up, and the best quality part that drips under the natural pressure of the mash itself is collected. It is a time-consuming process, and the amount that can be collected is limited.
